Prepare Tomato Sauce

Ingredients :

450 gms tomatoes
10 flakes garlic
3-4 tablespoon vinegar
2 ½ cm piece ginger
2 red chilli
1 dessertspoon leveled sugar
Sodium benzoate (preservative) if necessary
A few raisins
Salt to taste

Preparation :

Grind the ginger, garlic, red chillies, sugar, salt and raisins with vinegar. Do not use water.

Chop the tomatoes finely.

Add the ground masala to the tomatoes and cook in a covered pan on a slow fire till reduced to a pulp.

Sieve the tomato pulp and keep the puree on the fire until it thickens stirring occasionally.

Add salt, vinegar and sugar to taste. Fill in a sterilized bottle, cool and seal.
