1 kg sardines
250 ml refined oil, salad oil or olive oil
250 ml tomato ketchup
10 flakes garlic, crushed
Clean sardines removing heads, fins and entrails, wash well and apply salt.
Heat the oil in a pressure cooker. Add the garlic paste, ketchup and 2 cups of water.
Arrange the fish on the oil, etc. and close the cooker. Allow to cook for an hour and a quarter.
This dish can also be prepared by using vinegar (3 tablespoons) and fresh tomato puree instead of tomato ketchup.
In this case a paste of 6 cloves of garlic should be added to the heated oil, besides water.
