Ingredients :
2 medium brinjals
8 tbsps. Coconut
4 tbsps. Chopped coriander leaves
1 tsp. tamarind (crushed)
½ inch ginger (chopped finely)
6 green chilies
4 onions (chopped fine)
Salt and sugar to taste
Pinch of turmeric powder
Preparation :
Wash and wipe the brinjals dry.
Apply oil. Roast them on a gas or electric flame or on live coals (using a pair of tongs) till black, wrinkled and soft.
The brinjals can be grilled too. Peel and mash the brinjals. Mix mashed brinjals, coconut and remaining ingredients. Serve as chutney.
