Prepare Fresh bombay ducks (bombils) stuffed

12 large bombay ducks
2 tsps. Salt
2 or 3 tbsps. Spice paste of Reichand Masala ( vinegar, chilly powder paste ginger, garlic, pepper, coconut feni )
Rice flour
Oil


Preparation :

Clean the bombay ducks, apply salt and keep under some weight for an hour or so to allow the water to drain out completely.

Wipe dry, add a little salt and slit the fish on their backs.

Remove centre bone. Stuff with spice paste of Reichand Masala, coat with flour and fry in hot oil.
